I made this cake on Friday at 11pm. Call it therapy as my dear Pien tells me. I needed sometime to relax, so at 10.30pm I got myself into the supermarket, and carted home baking supplies. And this is what you get.

And here’s the recipe, good to feed 6.

Ingredients

  1. 300g plain chocolate
  2. 100g crushed ginger biscuits for crust (replaceable with digestives)
  3. 250g mascarpone cheese
  4. 25g melted butter
  5. 25g icing sugar

Now to ‘bake’ it.

  1. Mix melted butter with crushed biscuits well
  2. Press the resultant mixture onto the bottom on a baking tin, and chill for about 15minutes
  3. Melt chocolate, fold in icing sugar. (Use microwave to melt,it’s easier, but make sure you don’t burn it)
  4. Pour in mascarpone cheese, and mix well. WELL.
  5. Pour resulting mix into the baking tin over the biscuit base
  6. Chill for about 1 hour until the cake firms up before serving.

Variations

  1. You can add chocolate chips on top like I did! Or fruits!
  2. The resulting cake will be chocolatey and pretty hard, not ver much like the soft cheese cakes, if you like those, reduce the chocolate by 1/2, and add about 100g more cheese for the extra cheese. Experiment to taste.
